Serves 10-12
One of the most amazing chocolate brownies of all time! Not only full of nutritional goodness but the taste is absolutely divine as well. You can’t even taste the beans! Also great for kids as there’s a whole cup of hidden veggies in there!
Ingredients:
2 ½ cups black beans (350 g), drained and rinsed well
4 tbsp cacao powder (20 g)
½ cup almond meal
1 cup carrot and/or zucchini, grated
3/4 cup maple syrup or agave
2/3 cup coconut oil
2 tsp vanilla extract
3 tsp baking powder
zest of 1-2 oranges (depending on how strong a taste you want)
¾ cup choc chips (optional) + more for presentation
½ cup walnuts, roughly chopped + more for presentation
Preheat oven to 180 degrees. Grate the carrot and/or zucchini (I like to do half and half) and using a cheesecloth or paper towel, squeeze out the excess water. Combine all ingredients except choc chips and walnuts in a food processor and blend until smooth. The longer you blend, the better consistency the mixture will be. Stir in the choc chips and walnuts. Pour into a greased 10×10 pan. Sprinkle extra chocolate chips and walnuts on top. Cook the brownies for approx. 45 min. If the top begins to brown too much, cover with foil and place back in the oven. Let it cool for about 15 minutes before trying to slice it. Enjoy!
